At the Embassy’s table | Ile flottante with citrus and berries [fr]

On the occasion of the Francophonie week, our Chef Hervé Aubry shares with us his delicious recipe for citrus Ile flottante.

Find the ingredients below for 4 people:

Meringues:

  • 200g of egg whites
  • 1/2 yellow lemon
  • 1/2 lime
  • 130g of sugar

Caramel:

  • 100g of sugar
  • 10cl of water

Topping:

  • 1 orange
  • 1 lemon
  • 1 grapefruit
  • Mixed red fruits

A treat in a few steps :

Preheat oven to 200°C

Squeeze 1/2 lemon
Grate the lime

Put the egg whites, lemon juice and lime zest in a mixer
Beat the egg whites until firm
When a bit firm, add the sugar in small quantities

Put 4 circles on a non-stick plate, put the meringue in a pastry bag and fill the circles with meringue

Put in the oven and cook for 4 minutes

As soon as the meringues are done, put the tray in the fridge and let them rest for at least 1 hour without removing the circles

Peel the oranges, lemon and grapefruit
Cut into segments without the white skin

Gently remove the circles around the meringues,
Place on a plate, add a little "crème anglaise" around the meringue and decorate with the citrus and red fruits
